I don't know. For starters, people say that opposites attract. So a person with a Nordic phenotype would be attracted to a person with a Mediterranean phenotype, etc. I don't think that's really true as there are many Europeans, Arabs and even South Asians whom are attracted to Asian k-pop prettyboys and that's way more than just a difference in coloring. It's not always about looks. We're men, not women who are after looks only. And I could explain that. The difference between you and my friend is that you are ethnically white, but he isn't. He is still attracted to his own ethnic group. But I'm sure it varies from person to person. Maybe he's attracted to his own, but a white-passing ethnic female could be attracted to white boys and even Asian boys. I have seen examples of this in real life. I guess it's different for everyone.

If these men were being honest with themselves they would tell your noodles arent actually as attractive as White women, but they must settle for the noodle because they are too low value for a woman of their own race.
