Fresh mozzarella is unchallenged. The sweet, creamy, slightly acidic flavor; the emulsified fat and bouncy profile of it's gelatinous milky carapace... It's mozzarella straight up.

As an aside I generally prefer softer cheese like Ricotta or Brie, but a good Extra Mature aged cheddar provides a succinct nuttiness that's absolutely to die for.
