What do you mean by this question? For competing professionally? Lowest weight you can make without compromising your health. The most talent stacked divisions in MMA are usually the smaller divisions, flyweight through lightweight.

The optimal size would be being larger than your opponent, but that’s not always the case. 6’3” Neil Magny got submitted by 5’8” RDA.
most people aren't fighters tho. a 6'4 lanky soyboy could probably destroy a 5'6 gymcel due to the probable weight difference
 
Probably 6 4” and thick is the best. You have a huge height advantage but it’s not awkward

but having a good build and frame is first and foremost
 
taller fighters are often less coordinated,
I saw a 7ft ufc fight get ko'd by a 5'10 samoan fighter both same weight.
But tall as possible without losing coordination is best,
as for weight as heavy as possible without losing speed

Sure, Mike Tyson beat a lot of bigger opponents but all of his losses were against boxers that were bigger and taller than he was.

Theres this MMA guy named Hector Lombard. 5'9 at around 171 - 190lbs. Dude is a tank and very powerful striker. But again, his losses were to opponents taller and bigger than him.

Imagine the amount of stress that goes to your heart to be fighting at 5'9 and 180lbs. He might have low body fat but thats a lot of muscle he's carrying. Stress and strain on the heart.
